Gluten Free Air Fryer Spicy Pickle Spears

24 dill pickle spears
3 tablespoons ground flaxseed
2 cups gluten-free panko breadcrumbs
2 teaspoons finely chopped fresh dill plus additional for garnish (optional)
1 teaspoon crushed red pepper flakes
3/4 cup gluten-free all-purpose flour
ranch dressing for serving (optional)
Directions
- Drain pickle spears; pat dry with paper towel. In wide, shallow dish, whisk flaxseed and 3/4 cup water.
- In separate wide, shallow dish, stir breadcrumbs, dill, crushed red pepper and 1 teaspoon fresh cracked black pepper; place flour in third wide, shallow dish.
- Dredge pickle spears in flour, shaking off excess, then dip in flaxseed mixture, allowing excess to drip off, then in breadcrumb mixture to coat; place on rimmed baking pan and spray both sides with cooking spray.
- Preheat 3-quart air fryer to 400° for 5 minutes.
- In 6 batches, air fry pickle spears 7 minutes or until golden brown and crisp, turning once.
- Makes 24 pickle spears. Serve pickle spears with dressing garnished with dill, if desired.
